ORGANOLEPTIC FEATURES:

Colour: Straw yellow.
Fragrance:intense and pleasant, with notes of exotic fruit and spicy hints.
Taste: fresh and pleasantly soft, well balanced with persistent aftertaste.
Serving temperature: 8°-10° C
Serving suggestions: fish dishes, such as smoked salmon, tuna and swordfish, first course, spicy white meats.

VINEYARDS
The vineyards are located on the hills with clay soil. they are cultivated with the espallier system and the pruning is Guyot.

VINIFICATION
The grapes are harvested by hand in the end of August, first decade of September, and are vinified in purity in small stainless steel tanks at controlled temperature of 15°C.

MATURATION
The maturation occurs in small stainless steel tanks with battonage in the first months of refining.

THE WINE
A varietal native to Sicily, Grillo is the most wide-spread and famous white varietal on the island and was historically used for production of Marsala, the island’s famous fortified wine. Grillo is probably the variety that recalls better perfumes and the richness of sensation of Sicily.
