Produced by the international grape Syrah, it is an average late varietal reaching maturity around the end of September. Collected from the grapes of perfect phenolic and aromatic maturity. Destemming and alcoholic fermentation with the skins occurs for 10-12 days at 25-26° C. Malolactic fermentation occurs with selected bacteria, then finally maturation when the wine ages in barrique for one year giving soft tannins and gaining complexity.
